Saturday Scrumptiousness

I don't know about you, but on Saturday mornings I really enjoy indulging in a sweet, yummy breakfast. A lot of times I will make cinnamon rolls or orange danish (the Pillsbury kind). Occasionally I will make pancakes or blueberry muffins. And sometimes, if we are lazy, my hubby or I will pick up donuts. All undoubtedly delicious. And all undoubtedly bad, bad, BAD for you!

I'm transitioning my diet to be only plant-based, meaning I am trying to cut out as much dairy and meat as possible. Cutting out meat is the easy part for me. Parmesan cheese holds a special place in my heart, so cutting out dairy will be much more difficult...

This morning I remembered a recipe that I saw on a great vegetarian website and I thought it would be perfect! They are called Peanut Butter & Banana Toasties. They are super-simple to make and very healthy! I used one slice of Ezekiel bread (you can find this in the frozen section of the grocery store), natural PB, a few banana slices and a drizzle of agave nectar. Then, you just put it under the broiler for a few minutes until toasted!
